Savory Egg Salad with Apples

This spruced up Egg Salad is a perfect blend of creamy and crunchy to makes for a satisfying and quick breakfast. Combining diced hard-boiled eggs with cottage cheese provides a substantial protein boost, while the addition of crisp apple and celery adds extra interest. Ready in just a few simple steps, this egg salad can be served on toasted sourdough for an easy, nutritious meal that’s ideal for busy mornings or even a midday snack.

Ingredients4 servings

  • 8 hard-boiled eggs, diced
  • 4 slices of sourdough bread, toasted
  • 1 cup cottage cheese
  • 1 medium apple, diced
  • 2 celery stalks, diced
  • 2 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • Garnish: chopped parsley

Directions

Place the eggs in a small saucepan and cover them with water. Make sure the water is about 1 inch above the eggs. Bring the water to a boil over medium-high heat. Once it boils, turn off the heat, cover the pan, and let the eggs sit for 10-12 minutes.

Drain the water and transfer the eggs to a bowl of ice water to cool for about 5 minutes.

Peel and dice the eggs and put them in a bowl. Mix in the cottage cheese, apple, celery, lemon juice, Dijon mustard and salt until well combined. Taste and adjust the seasoning if desired.

Serve the egg salad on sourdough toast.  

Notes:

  • Save time in the morning by boiling and peeling the eggs the night before. Simply store them in an airtight container overnight.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.

    The best part of this recipe is its simplicity to prepare and so very healthy. I love eggs, cottage cheese and apples- a little lemon juice and a dash of Dijon mustard is all you need!!!

    Sounds yummy. Being a vegan I use Hodo (tofu) All -Day Egg Scrambel with veganase and mustard on Ezekiel 4:9
    Bread. I toast it and spread the tofu scramble egg on it. Paprika sprinkled on it. Sometimes avocado and other times with humus. I also use kale. I eat the whole crispy apple along with it. Not mixed in. Pepper sprinkled on it as well.

    It’s MUCH easier and quicker to poach the eggs in the microwave.
    I heat about 2c. water for 3 minutes in the microwave. Crack 4 eggs into the hot water. Microwave for 1 minute. Pause for a minute. Repeat 2 times. (The pause is to eliminate the yokes exploding.) Pour off the hot water. Eggs are ready.
